Making chocolate chip pancakes with you guys is always a fun time for me. Waking up in the morning, heading to the kitchen and just spending time together, priceless.
Our time in the kitchen is not only dad teaching you how to cook. It is also spending time together. Laughing, talking and learning. For me, it becomes one of the days highlights.
Making chocolate chip pancakes is one of the first things I have made with all 3 of you. It became a great start to our cooking adventures. So, for future reference here is how we do it.
1 1/3 cup flour
2 tsp baking powder
1/2 tsp salt
3 tbsp sugar
1 1/4 cup milk
3 tbsp vegetable oil
1/4 tsp vanilla
(Makes approximately 5 regular size pancakes)
First mix all the dry ingredients. Then add the milk, egg and vanilla. Mix well. Add the oil last and mix well so there is no clumps. You want a smooth batter.
When you were all younger, this was the beat part. We all got covered in batter, the table was a mess but boy did we have fun. Cracking eggs and mixing vigorously was so much fun to watch.
Then we cook!
Pour the batter onto the griddle. How much depends on how big you want them. This is also where we add the chocolate chips. Sprinkling them on and sneaking a few to eat.
Make the true circle or create your own designs like we do. You can even use molds or cookie cutters to hole a true shape. The possibilities are endless.
You made hearts for mom and they were perfect!
Once the edges start to bubble, flip them over. Use caution doing this as the pan is hot and so is the batter.
This is the part I love now. Seeing how well you can pour the batter. The care you show working around the griddle. The way you flip and how proud you look making chocolate chip pancakes melts my heart.
